Vidalia® Onion Summer Salsa with Shrimp

The sweet and savory tang of Boar's Head Sweet Vidalia Onions in Sauce accents the crisp flavor of fresh watermelon and blueberries for a healthy summer dish.

Ingredients

Directions

  1. Mix together the olive oil, cilantro and parsley; add the shrimp, massaging the oil and herbs into each shrimp with your fingers.
  2. Skewer the shrimp at the top and near the tail for easy turning. Thread 4 per skewer.
  3. Salt and pepper lightly.
  4. Place on a hot grill, cooking on both sides until lightly browned.
  5. Meanwhile, mix together the watermelon, blueberries, cucumber and Boar's Head Sweet Vidalia Onions in Sauce.
  6. Place shrimp on a serving plate and drape some salsa over the top, leaving extra for serving. Garnish with parsley.
