EverRoast® & Sweet Potato Egg Nests

Ingredients

Directions

  1. Preheat the oven to 350°.
  2. In a large nonstick skillet, heat the oil over medium and cook the onion until soft and golden.
  3. Mix shredded sweet potatoes with the sautéed onions and mustard.
  4. Mold the mixture into separate cups in a muffin tin.
  5. Bake for 30 to 35 minutes or until crisp; cool in the pan. (This can be done a day ahead of time. Cover the cooled cups and wrap in plastic; refrigerate.)
  6. Scramble the eggs with the chicken and when cooked, evenly divide among the sweet potato cups. Top with thyme and serve.
