Cajun Turkey Red Beans & Rice

  1. In a heavy bottom pot, sauté onions, celery, garlic and peppers in oil.
  2. Add rice to the pot and stir to mix rice with vegetables.
  3. Add dry herbs and pour water over the rice.
  4. Bring rice to a boil and turn down heat until water is at a rolling simmer.
  5. When the water level evaporates to the top of the rice, lower the heat to very low.
  6. Add red beans and the diced Cajun Turkey.
  7. Cover and turn off heat.
  8. Let rice finish cooking for 15 minutes.
  9. Uncover and add butter.
  10. Gently fold the bean and turkey into the rice (avoid mashing the beans)
  11. Portion and serve
