Spicy Potato Skins

These bacon-filled potato skins make for a savory and fun appetizer or side dish. Top with cheese and sour cream for even more intense flavor.

  1. Cook bacon until crispy, cool, and crumble.
  2. Scrub potatoes thoroughly, and bake in 400° F oven for 1 hour or until done.
  3. Allow potatoes to cool to the touch.
  4. Cut in half lengthwise.
  5. Carefully scoop the pulp leaving ¼ inch shell (reserve the pulp for another recipe or discard).
  6. Sprinkle the inside of the potato skins with salt and pepper.
  7. Top with crumbled bacon, green onions, and cheese.
  8. Place potato skins on a baking sheet and broil in the oven until cheese melts.
  9. Serve with sour cream, if desired.
