  1. In a small bowl, mix the yogurt with the garlic and slowly whisk in the oil; set aside.
  2. In a salad bowl, mix the salad greens with the green onions, cucumbers and tomatoes and toss lightly with a little of the dressing to moisten.
  3. Add the roast beef and provolone cheese. Toss with more of the dressing.
  4. Sprinkle with poppy seeds and serve. Add more tomatoes for color, if desired.
