Take - Away Breakfast In A Muffin

Sweet fresh peaches, rich Cheddar cheese and the delightful flavor of a long standing favorite from Boar's Head, bakes into a mini breakfast on the road.You can prep this recipe the night before and bake it next morning while everyone is getting dressed for work or school. If you need time for the muffins to cool down, bake in cupcake liners and pack them to take to school or the office.

  1. Preheat the oven to 400° F. Prepare a 12 cup muffin tin with nonstick cooking oil spray or use paper muffin liners.
  2. Cube the peaches. Combine the peaches and lemon juice in a small bowl. Stir to mix; set aside.
  3. In a large bowl combine the flours, sugar, baking powder, nutmeg and salt; mix thoroughly.
  4. Beat the egg, oil and milk together in a small bowl. Add to the dry ingredients and stir just until the flour is moistened. Fold in the peaches, ham and 1 cup of cheese.
  5. Divide the batter among the muffin cups; each will be about 2/3 full. Sprinkle the remaining cheddar cheese over the top.
  6. Bake for about 25 minutes, or until a tooth pick poked through the center of a muffin comes out clean. Remove the muffins from the pan immediately to avoid sticking and place on a cooling rack.
