Gluten Free EverRoast® Baked Eggplant Parmesan

  1. Preheat oven to 350° F.
  2. Place 3 tbsp olive oil on a baking sheet.
  3. In a bowl, whisk together egg and milk. In a separate bowl combine gluten free bread crumbs and cornmeal. Dip each eggplant slice, first in egg mixture and then in bread crumbs, covering both sides. Place the coated eggplant rounds on the baking sheet. Bake eggplant for 15 minutes.
  4. Spoon marinara sauce to cover the bottom of an oven safe baking dish. Place ½ of baked eggplant on top of sauce, top with chicken, mozzarella cheese and remaining eggplant. Spoon marinara sauce and sprinkle parmesan cheese to coat.
  5. Bake for 15-20 minutes until cheese is melted and chicken is warmed through. Garnish with Parmesan cheese to serve.
