EverRoast® Chicken with Mushroom Sauce on Toast Points

Mushrooms and watercress form a tasty base for a sauce that drapes over the chicken and slices of toasted bread. Great for an easy but satisfying mid-week dinner.

  1. Heat 2 tablespoons of the oil in a medium skillet over medium heat and sauté the mushrooms until softened (about 5 minutes).
  2. Add the shallot and cook another 2 minutes.
  3. Stir in the flour for a minute.
  4. Add the broth and yogurt, tarragon, mustard, and watercress. Cook until the sauce thickens (2 or 3 minutes).
  5. Toast the bread and spread lightly with the butter; cut in half on the diagonal.
  6. In a large clean skillet, heat the remaining tablespoon of oil and sauté the chicken over medium-high to warm through and brown slightly, about 2 minutes per side.
  7. Place the chicken on top of the toasted bread, cover with a sprig of watercress and serve.
