Quick Roast Beef, Mashed Potatoes and Gravy

  1. Quarter and simmer potatoes until tender (about 10 minutes). Once tender, drain and return to cooking pot.
  2. In the cooking pot, mash with potato masher or large fork.
  3. Add butter, sour cream and horseradish sauce a bit at a time, and continue to mash until desired consistency reached. Add salt and pepper to taste.
  4. Serve mashed potatoes with roast beef.
