Baked Onions With Gruyere Cheese

  1. Cut the top third of each onion off, leaving the root end uncut. Peel each onion. Using a melon baller scoop the center out of each onion. On a cutting board chop the scooped centers of the onions.
  2. Heat a medium sized sauté pan over medium high heat. Add the butter and the chopped onions, salt, and pepper and sauté for 2-3 minutes. Set aside.
  3. Add the whole onions to a stock pot and cover with water. Bring the onions to a boil and cook for 2-3 minutes. Onions should still be firm. Drain the onions and let cool slightly.
  4. Preheat the oven to 350° F degrees.
  5. Add the parsley, panko, and 1 ½ cups gruyere cheese to the sautéed onions and mix. Divide the mixture between the onions and stuff into each center. Place the onions onto a baking sheet and place directly into the oven. Bake for 10-12 minutes. Carefully remove the onions from the oven and serve immediately.
