  1. Melt butter in non-stick omelet pan over medium heat.
  2. Sauté onions and carrots for one minute.
  3. Add your diced chicken and continue to cook for 30 more seconds.
  4. Add eggs and stir until they are just about done.
  5. Sprinkle in about ¾ of the shredded Vermont Cheddar and stir until melted.
  6. Remove from heat and fill Challah rolls with the egg mixture. Sprinkle remaining cheese and chives on top for garnish.
