Bucatini All' Amatriciana

  1. Set water to boil and cook pasta according to package directions.
  2. Heat olive oil in a large skillet over medium heat. Sauté onion for about 2 minutes, until tender.
  3. Add the pancetta and pepper flakes, and sauté until pancetta is crisp.
  4. Stir in the tomatoes and sugar.
  5. Raise the heat to medium high, cooking about 15 minutes and stirring often.
  6. Drain pasta and pour the pasta directly into pan with the sauce. Mix well.
  7. Sprinkle with Boar's Head Imported Grated Romano Cheese and serve.
