Bucatini All' Amatriciana

  1. Set water to boil and cook pasta according to package directions.
  2. Heat olive oil in a large skillet over medium heat. Sauté onion until tender about 2 minutes.
  3. Add the pancetta and pepper flakes, and sauté until pancetta is crisp, a few minutes more.
  4. Stir in the tomatoes and sugar.
  5. Raise the heat to medium high, cooking about 15 minutes, stirring often.
  6. Drain pasta and pour the pasta directly into pan with the sauce, mix well.
  7. Serve with Boar's Head Imported Grated Romano Cheese and serve.
