Black Forest Ham And Poblano Cream Sauce Casserole

  1. Preheat oven to 350° F degrees.
  2. Add the oil to a medium sauté pan and heat over med high heat. Add the onions to the pan and sauté for 2-3 minutes, add the garlic and corn and sauté for 1 minute more. Remove the pan from the heat and set aside.
  3. Add the poblano pepper, sour cream, cumin, chili powder, salt, pepper, and ¼ cup milk to the bowl of a food processor fitted with the steel blade. Pulse the mixture for 30 seconds.
  4. Grease a 9x9 inch casserole pan. Add the remaining ¾ cup milk to a shallow bowl. Dip 4 slices of bread into the milk and lay flat onto the bottom of the casserole pan. Spread ½ cup of the poblano sauce over the bread. Spoon ½ cup of the corn mixture over the sauce. Layer 6 slices of the ham over the corn mixture and sprinkle with 1 cup of mozzarella cheese. Repeat 2 more times. Serve remaining sauce with casserole.
  5. Cover the casserole pan with foil and place directly into the oven for 30 minutes. Carefully remove the foil from the pan and bake for 10 minutes more. Remove the casserole from the oven and let rest for 10 minutes before serving.
