Roast Beef and Cheese Hoagie with Tomato Corn Relish

We love this sandwich for dinner as well as lunch. Delightfully easy to make and sure to satisfy.

  1. Cut the Hoagie roll in half horizontally. In the top half, make a well in the middle of the roll, about 1/4 inch deep.
  2. In a small bowl combine red pepper, corn, red onion, tomato, and deli dressing. Mix well.
  3. Pour the corn mixture into the well on the top half of the roll.
  4. On the bottom half of the roll, stack the cheese, lettuce and beef.
  5. Press two halves of the roll together and serve.
