Tropical Chicken Salad Cups

  1. Thaw 12 pastry shells according to package directions.
  2. Mix the chicken, fruit and celery in a bowl. Note: Feel free to change up the fruit. Mango or apple work well in place of the pineapple.
  3. In a separate bowl, mix light mayonnaise, honey and lemon juice.
  4. Stir the mayonnaise mixture into the chicken mixture. Mix well. Season with salt and pepper if desired. Chill.
  5. Once cold, divide the chicken salad among the 12 cups.
