Julienned Turkey with Kale & Lentils

  1. In a large skillet, heat 1 tablespoon olive oil over medium.
  2. Add onion and thyme; season with salt and pepper.
  3. Cook, stirring occasionally, until onion is softened, about 5 minutes.
  4. Add kale and cook, stirring occasionally until kale is wilted and tender, 4 minutes.
  5. Transfer to a medium bowl.
  6. Add 1 tablespoon olive oil and lentils to skillet; season with salt and pepper.
  7. Cook, stirring, until warmed through, about 20 seconds.
  8. Transfer to bowl with kale, toss to combine, and divide among four bowls. Top with turkey and squeeze lemon over top.
