Sweet Sopressata Stuffed Mushrooms

  1. Preheat oven to 400° F.
  2. Remove stems from mushrooms, trim tips and chop remaining stems.
  3. Heat 2 Tbsp. of olive oil in a large saucepan over medium heat. Add chopped mushroom stems and onion. Stir often until the mushroom stems are tender and the onion is translucent.
  4. Transfer to a bowl. Add Sopressata, breadcrumbs, ½ cup of cheese, and egg. Mix well to combine.
  5. Divide filling among mushroom caps, heaping slightly. Arrange mushrooms in one layer on an oiled baking sheet.
  6. Sprinkle the stuffed mushrooms with the remaining cheese and drizzle with 2 Tbsp. of olive oil and bake until tender about 20 – 25 minutes.
