Thai Noodle Soup with EverRoast® Chicken

Udon is a healthy Japanese wheat spaghetti with nice flavor that goes so well with chicken, especially complementing the veggies that are roasted in EverRoast®.

  1. Boil the noodles according to package directions.
  2. Heat the oil in a large saucepan and sauté chicken for 2 minutes to brown slightly; set aside.
  3. Add the onions and garlic and sauté over medium heat, about 3 minutes until fragrant.
  4. Add the ginger and cook for 1 minute.
  5. Stir in the broth, coconut milk, and peanut butter. Bring to a boil, stirring, then simmer (about 8 minutes).
  6. Add the red bell pepper, peas, red pepper flakes, and cook for 2 minutes.
  7. Add the cooked drained noodles and browned chicken and serve.
