3 Cheese Tennessee Onions
Instructions
- Preheat oven to 350F.
- Peel and cut onions into ¼” rings.
- Pick and chop the oregano and parsley, then mix and set aside; reserve 1 tbsp for garnish.
- Shred the cheeses into 3 separate bowls.
- In a large bowl, toss onions in chicken stock, heavy cream, flour, 3 tbsp of chopped herbs, and spices.
- Use a non-stick spray to thoroughly cover an 8x8 baking pan, alternately, line baking pan with parchment paper and spray paper.
- Lay out coated onions on the pan, making sure to pour over any additional mixture in the bowl over the onions.
- Layer evenly with cheese; start with Cream Havarti, then Caramelized Onion Jack, and finally Vermont Cheddar.
- Cut butter into 8 small portions and drop evenly over cheese.
- Cover the pan with foil and bake in the oven for 40 minutes.
- Remove foil and continue baking for an additional 30 minutes, or until the cheese is caramelized and golden brown.
- Remove from oven and let sit for 7-10 minutes.
- Garnish with the reserve herb mixture, serve, and enjoy!
