"Nashville Hot" Feta Cheese Pita

  1. Combine pickles, banana pepper and juices in mixing bowl
  2. Add cheese batons and cover with water
  3. Refrigerate for minimum 4 hours or up to 24 hours
  4. Remove cheese from brine and pat dry
  5. Whisk buttermilk with hot sauce and beaten egg in shallow container
  6. In another shallow container, combine flour, pinch of paprika and pinch of cayenne
  7. Heat oil in deep fryer to 350⁰F
  8. Dredge cheese pieces in flour, then buttermilk mixture, then again in seasoned flour
  9. Fry cheese approximately 3 minutes or until golden brown
  10. Remove and drain on wire rack or paper towels
  11. Meanwhile, combine remaining paprika and cayenne, brown sugar, red pepper flakes, garlic powder and cumin in mixing bowl
  12. Scoop approximately 1 - 2 ounces hot fryer oil into bowl and whisk to combine spices
  13. Brush the spicy oil over fried cheese and place inside warmed pita pocket
  14. Mix cole slaw blend with mayonnaise, granulated sugar, vinegar, salt and pepper
  15. Serve pita pocket topped with cole slaw, pickle chips and banana peppers
