Ichiban Teriyaki Chicken Onigiri Rice Ball

- Wash rice in a mesh strainer until water runs clear. Combine washed rice and 4 1/2 cups of water in a saucepan.
- Bring to a boil over high heat, stirring occasionally. Reduce heat to low, cover. Simmer rice until the water is absorbed, 15 - 20 minutes.
- Let rice rest for 15 minutes. then allow to cool. In a small bowl combine the chicken, cilantro and scallions.
