Sweet Slice Ham Linguini Pasta

- In a sauce pot, steep the cream with the onion, bay leaf, garlic, thyme and pepper.
- Reduce by 1/3, strain and reserve.
- Heat the blanching water and add a generous amount of salt.
- In a heated sauté pan, add butter and mushrooms.
- Cook mushrooms on high heat until they are fully cooked, about 5 minutes.
- Add the diced Sweet Slice Ham and heat.
- Add the cream reduction and cook all together until cream starts to thicken.
- Cook the pasta until al dente and strain in a pasta colander.
- Add pasta to the cream, Ham and mushroom sauce then fold in the peas.
- Toss the pasta with basil.
- Portion the sauced pasta and grate the fresh Parmigiano Reggiano over each bowl.
