Aged Gouda Spaghetti Carbonara

  1. Cook the spaghetti according to package directions, drain and set aside, reserving two cups of the pasta water
  2. In a medium bowl, whisk the egg yolks together until smooth
  3. Add the grated cheeses and season with the fresh ground pepper
  4. Heat the oil in a saute pan over medium heat
  5. Add the pancetta and cook until golden brown and crispy, approximately 5 minutes
  6. Slowly whisk 1/4 cup of the pasta water into the cheese and egg mixture
  7. Add the pasta to the pan with the pancetta and toss
  8. Add the egg mixture, tossing continuously until the pasta is well coated
  9. Add additional reserved pasta water to reach a creamy consistency
  10. Serve immediately with fresh cracked pepper
