London Broil Birria Style Tacos
Inspired by the street-cart favorite, these tacos are crispy, savory, and loaded with melty Monterey Jack Cheese. Thinly-sliced London Broil Roast Beef and canned chipotle peppers cut down on prep time, without sacrificing flavor.
Ingredients

London Broil Top Round Roast Beef, thin sliced and roughly chopped1cup
Monterey Jack Cheese, shredded1can (4 oz)
Chipotle Peppers in Adobo Sauce2tbsp
Olive Oil1
Small onion, chopped2
Beef broth8
6-inch tortilla½cup
Cilantro, choppedInstructions
- 01Heat oil in a small pot over medium high heat. Add chopped onion and peppers and sauté until onions are translucent, about 5 minutes. Mix in the beef broth and keep on low.
- 02Preheat oven to 400ºF.
- 03Coat baking sheet with nonstick cooking spray.
- 04Dip tortillas in the prepared broth and place on the baking sheet. Top with roast beef and cheese, then fold tortillas in half.
- 05Bake for 5-7 minutes until brown and toasty.
- 06Serve and dip into remaining broth.
