Greek Orzo Pasta Salad with Roasted Garlic Hummus

Serve a summertime side as refreshing as the sea. Filled with fresh, crisp veggies and blanketed in Roasted Garlic Hummus, your guests will enjoy every light and flavor-filled bite.

Ingredients


Orzo pasta, cooked
2tbsp
Olive Oil
cup
Boar's Head Roasted Garlic Hummus
1
Lemon, for juice
1cup
Grape tomatoes, halved
1
Cucumber, diced
1
Small Red Onion, chopped
½cup
Kalamata olives, pitted and halved
8oz
Crumbled Feta Cheese
Fresh mint, for garnish
 
Salt and Pepper, to taste

Instructions


  1. 01Add cooked orzo to a serving bowl.
  2. 02In a small mixing bowl, combine olive oil, hummus and lemon juice. Stir until it has a dressing consistency, adding water or olive oil as needed. Add to orzo and toss until well combined.
  3. 03Fold in tomatoes, cucumber, red onion and kalamata olives.
  4. 04Garnish with feta cheese, mint and salt and pepper to taste.
  5. 05Serve cold.
