Greek Orzo Pasta Salad with Roasted Garlic Hummus
Serve a summertime side as refreshing as the sea. Filled with fresh, crisp veggies and blanketed in Roasted Garlic Hummus, your guests will enjoy every light and flavor-filled bite.
Ingredients

Orzo pasta, cooked2tbsp
Olive Oil⅔cup
Boar's Head Roasted Garlic Hummus1
Lemon, for juice1cup
Grape tomatoes, halved1
Cucumber, diced1
Small Red Onion, chopped½cup
Kalamata olives, pitted and halved8oz
Crumbled Feta Cheese⅓
Fresh mint, for garnishInstructions
- 01Add cooked orzo to a serving bowl.
- 02In a small mixing bowl, combine olive oil, hummus and lemon juice. Stir until it has a dressing consistency, adding water or olive oil as needed. Add to orzo and toss until well combined.
- 03Fold in tomatoes, cucumber, red onion and kalamata olives.
- 04Garnish with feta cheese, mint and salt and pepper to taste.
- 05Serve cold.
