Huevos Rancheros

Complete with Mexican-style eggs, black bean hummus and an extra kick of Chorizo Chicken Sausage, these huevos rancheros will bring zest to your breakfast with every rich, hearty layer.

Ingredients


Mild salsa
4
Corn tortilla
1container
Southwest Style Black Bean Hummus
1tbsp
Olive Oil
4
Egg
1pack
Boar's Head Chorizo All Natural Chicken Sausage, cooked and diced
 
Freshly ground black pepper
 
Crumbled Feta Cheese, for sprinkling
1
Avocado, sliced
 
Fresh cilantro, for garnish

Instructions


  1. 01Pour salsa into a small saucepan over low heat, stirring occasionally until heated through.
  2. 02Warm each tortilla in a small skillet over medium heat, then evenly distribute black bean hummus on each. Set aside.
  3. 03Add oil to skillet, then crack an egg into the heated oil. Fry and flip until over easy, about 1 minute per side, then place on top of the tortillas. Repeated with remaining eggs.
  4. 04Carefully spoon the warm salsa on top of the prepared tortillas.
  5. 05Dress with chicken sausage, feta cheese, avocado and cilantro.
  6. 06Serve wam.
