Blazing Buffalo® Chicken Enchiladas (World Cup)

Ingredients

Boar's Head Blazing Buffalo Style Chicken Breast, Shredded
30oz
Boar's Head® Cream Cheese, Softened
30oz
Product: 15008 FS Creamy Gorgonzola Cheese Crumbles
30each
Corn tortillas
3
Onions, Diced
2
Poblano peppers, Seeded & diced
1cups
Celery, peeled & diced
1bunch
Fresh cilantro, Washed & picked
8oz
Mexican Crema or Sour Cream
4each
Jalapenos, Seeded & diced
1cup
Olive oil

Instructions


  1. 01Preheat oven to 375° F.
  2. 02Saute the onions, peppers and celery in half of the olive oil until softened.
  3. 03Combine the shredded chicken and sauteed vegetables with the cream cheese.
  4. 04Brush each tortilla (one side only) with the olive oil.
  5. 05Working in batches, warm the tortillas in a pan, oil side down.
  6. 06Remove the warmed tortillas and fill with the buffalo chicken filling (approximately 2 tablespoons).
  7. 07Roll and place in an oven proof with the seam side of the tortilla down. baking dish.
  8. 08Repeat until all the tortillas are filled.
  9. 09Sprinkle the crumbled Gorgonzola over the rolled tortillas.
  10. 10Heat in the oven for 10 minutes until the filling is completely warmed through and the tortilla is crispy.
  11. 11Remove the enchiladas and portion (3 per serving).
  12. 12Garnish the enchiladas with the crema, cilantro and diced jalapenos.
  13. 13Serve
