Bold® BourbonRidge® Ham Belgian Waffles

Product: 11069 - Boar’s Head Bold® BourbonRidge® Uncured Ham, Shaved1each
Belgian Waffle, Pre-Baked (IQF)2½oz
Bourbon Peach Conserve, Prepared (See Recipe)¾oz
Herb Honey Compound Butter, Prepared (See Recipe)2fluid ounces
Bourbon20oz
IQF Peaches10oz
Peach Preserves, Prepared8oz
Butter, Softened3oz
Honey1tbsp
Lemon juice1tbsp
Fresh flat-leaf parsley, Chopped1tbsp
Fresh basil, Chopped0tbsp
Fresh rosemary, Chopped0tbsp
Thyme, Chopped1tbsp
Fresh Chives, ChoppedInstructions
- 01Heat the waffle
- 02Top the waffle with the ham
- 03Spoon the herb compound butter over the ham
- 04Flash warm the waffle and ham in the oven to start melting the compound butter
- 05Serve with a side of warmed peach conserve
- 06Bourbon Peach Conserve:
- 07Combine the bourbon, IQF peaches, and the peach preserves
- 08Cook the conserve down until the liquid from the peaches is reduced
- 09Allow the conserve to cool completely
- 10Place in a food processor to quickly chop up the peaches
- 11Store in a non-metallic foodsafe container
- 12Herb Honey Compound Butter:
- 13Place the softened butter in a table top mixer with the paddle attachment. Blend until whipped and light.
- 14Add remaining ingredients and mix until fully incorporated
- 15Place whipped butter in parchment paper and from into a log shape
- 16Refrigerate until firm and use as needed
