Sweet Slice® Ham Linguini Pasta
Ingredients
16oz
Boar's Head Sweet Slice® Smoked Ham, diced, medium cubes½quart
Heavy cream4oz
Onion, quartered1leaf
Bay leaf1clove
Garlic, slivered¼bunch
Basil, fresh, chiffonade¼tsp
Fresh ground pepper8oz
Cremini Mushrooms, quartered6oz
Peas, frozen, thawed8oz
Parmigiano Reggiano Cheese, grated4oz
Unsalted Butter, diced20oz
Linguini Pasta, blanched¼bunch
ThymeInstructions
- 01In a sauce pot, steep the cream with the onion, bay leaf, garlic, thyme and pepper.
- 02Reduce by 1/3, strain and reserve.
- 03Heat the blanching water and add a generous amount of salt.
- 04In a heated sauté pan, add butter and mushrooms.
- 05Cook mushrooms on high heat until they are fully cooked, about 5 minutes.
- 06Add the diced Sweet Slice Ham and heat.
- 07 Add the cream reduction and cook all together until cream starts to thicken.
- 08Cook the pasta until al dente and strain in a pasta colander.
- 09Add pasta to the cream, Ham and mushroom sauce then fold in the peas.
- 10Toss the pasta with basil.
- 11Portion the sauced pasta and grate the fresh Parmigiano Reggiano over each bowl.
