Sweet Slice® Ham Linguini Pasta

Ingredients


16oz
Boar's Head Sweet Slice® Smoked Ham, diced, medium cubes
½quart
Heavy cream
4oz
Onion, quartered
1leaf
Bay leaf
1clove
Garlic, slivered
¼bunch
Basil, fresh, chiffonade
¼tsp
Fresh ground pepper
8oz
Cremini Mushrooms, quartered
6oz
Peas, frozen, thawed
8oz
Parmigiano Reggiano Cheese, grated
4oz
Unsalted Butter, diced
20oz
Linguini Pasta, blanched
¼bunch
Thyme

Instructions


  1. 01In a sauce pot, steep the cream with the onion, bay leaf, garlic, thyme and pepper.
  2. 02Reduce by 1/3, strain and reserve.
  3. 03Heat the blanching water and add a generous amount of salt.
  4. 04In a heated sauté pan, add butter and mushrooms.
  5. 05Cook mushrooms on high heat until they are fully cooked, about 5 minutes.
  6. 06Add the diced Sweet Slice Ham and heat.
  7. 07 Add the cream reduction and cook all together until cream starts to thicken.
  8. 08Cook the pasta until al dente and strain in a pasta colander.
  9. 09Add pasta to the cream, Ham and mushroom sauce then fold in the peas.
  10. 10Toss the pasta with basil.
  11. 11Portion the sauced pasta and grate the fresh Parmigiano Reggiano over each bowl.
