Instructions

In a small skillet over medium heat, sauté the onion in olive oil until soft and fragrant. Remove from the skillet and set aside.
Top one slice of bread with half of cheese, the sauted onions, chicken and the rest of the cheese. Place the other slice of bread on the sandwich.
Melt the butter on a skillet over medium heat, then mix with Garlic Aioli.
Place the sandwich in the skillet. Grill the sandwich until the bread is crisp and golden brown and the cheese has melted. About 3-4 minutes per side.
Slice diagonally and serve.
