Strawberry and Avocado Salad with EverRoast® Chicken

A simple salad that's bursting with the flavor of EverRoast®Chicken and Feta Cheese, this meal comes together in under 20 minutes for a light yet satisfying option.

Ingredients

Extra Virgin Olive Oil
2tbsp
Balsamic vinegar
1tbsp
Tarragon, minced
6cups
Fresh spinach

Strawberry, sliced
½
Red Onion, sliced thin
1
Avocado, cubed
4oz
Boar's Head Feta Cheese, Crumbled
1½lbs
Boar's Head EverRoast® Chicken Breast, sliced thick

Instructions

  1. 01Whisk the olive oil, balsamic vinegar, tarragon, and season to taste in a bowl. Set aside.
  2. 02In a bowl, toss in the spinach, strawberry, red onion and avocado.
  3. 03Pour the dressing over the spinach and gently toss until well covered.
  4. 04Top with Boar's Head Feta and sliced EverRoast® Chicken.
  5. 05Serve and enjoy.
