Mediterranean Hummus Sushi Rolls

A twist on traditional sushi rolls using Boar's Head Traditional Hummus. These Mediterranean sushi rolls combine all of the flavor of a Greek salad rolled up in refreshing cucumber slices. Top these rolls off with a dollop of Tzatziki Greek Yogurt Dip and a sprinkle of Feta Cheese crumbles.

  1. Chop the olives, red onion and tomato finely and combine with olive and sea salt in a small bowl. Set aside to marinate.
  2. Using a mandoline slicer, peel the cucumber into thin slices, lengthwise.
  3. Spread 2 tablespoons of hummus on each cucumber slice. Top with vegetable marinade and a sprinkle of feta, then roll up tightly, securing with a toothpick if needed.
  4. Top the sushi with a dollop of tzatziki, a squeeze of lemon, and fresh dill.
