Mediterranean Sushi Rolls with Traditional Hummus
Crisp cucumber slices, coated in our creamy Traditional Hummus, become the tasty wrapping for bites of vegetable marinade. Each delectable piece of sushi is then topped with a dollop of our Tzatziki Greek Yogurt Dip and dill for full flavor.
Instructions
- Chop the olives, red onion and tomato finely and combine with olive oil and sea salt in a small bowl. Set aside to marinate.
- Using a mandoline slicer, peel the cucumber into thin slices, lengthwise.
- Spread 2 tablespoons of hummus on each cucumber slice. Top with the vegetable marinade and a sprinkle of feta, then roll up tightly, securing with a toothpick if needed.
- Top the sushi with a dollop of tzatziki and a squeeze of lemon.
