Instructions


  1. 01Preheat the oven to 400º F.
  2. 02Add 2 tbsp of butter to a 12-inch iron skillet, then place in the oven to heat slightly, about 5 minutes.
  3. 03In a mixing bowl, add the eggs, flour, milk, and mustard, then whisk to combine. Add the chives and whisk until evenly distributed.
  4. 04Transfer the mixture into the heated skillet, then place in the oven for 20 minutes, or until puffed and golden brown.
  5. 05If making the sauce, melt butter in a small saucepan. Add flour, whisking for 1 minute, then gradually whisk in the milk. Bring to a simmer, then whisk in mustard as the sauce thickens. Set aside.
  6. 06When the dutch baby is ready, remove the skillet from the oven and top with the grated cheese and slices of ham. Return the skillet to the oven for another 5 minutes, or until the cheese is melted and ham is slightly browned.
  7. 07In the meantime, pan fry the remaining 2 eggs with olive oil over medium heat, cooking until desired likeness.
  8. 08Remove the dutch baby from the oven and let it cool for 5 minutes. Top with the sauce and fried eggs. Serve and enjoy!
