Huevos Rancheros

Complete with Mexican-style eggs, black bean hummus and an extra kick of Chorizo Chicken Sausage, these huevos rancheros will bring zest to your breakfast with every rich, hearty layer. 



  1. Pour salsa into a small saucepan over low heat, stirring occasionally until heated through.
  2. Warm each tortilla in a small skillet over medium heat, then evenly distribute black bean hummus on each. Set aside.
  3. Add oil to skillet, then crack an egg into the heated oil. Fry and flip until over easy, about 1 minute per side, then place on top of the tortillas. Repeated with remaining eggs.
  4. Carefully spoon the warm salsa on top of the prepared tortillas.
  5. Dress with chicken sausage, feta cheese, avocado and cilantro.
  6. Serve wam.
