Quinoa, cooked½cup
Chickpeas1tbsp
Olive Oil1dash
Salt & pepper, to taste½
Tomato, diced¼
Cucumber, diced¼
Kalamata olives, sliced½cup
Red Onion, diced4oz

Tzatziki Greek Yogurt Dip1
Lemon, squeezed to taste1oz
Crumbled Feta CheeseInstructions
- 01In a medium bowl, add quinoa and chickpeas. Toss with olive oil, salt and pepper.
- 02Top the quinoa with diced tomatoes, cucumber, olives, red onion, cubed chicken and a dollop of tzatziki.
- 03Squeeze lemon juice over the bowl, then sprinkle with feta cheese.
- 04Enjoy now or pack away in a tupperware container to enjoy this week!
