Quinoa, cooked
½cup
Chickpeas
1tbsp
Olive Oil
1dash
Salt & pepper, to taste

Tomato, diced

Cucumber, diced
¼
Kalamata olives, sliced
½cup
Red Onion, diced
4oz
Boar’s Head® FireSmith® Flame Grilled Chicken Breast (13086), dinner cut and cubed
¼cup
Tzatziki Greek Yogurt Dip

Lemon, squeezed to taste
1oz
Crumbled Feta Cheese

Instructions


  1. 01In a medium bowl, add quinoa and chickpeas. Toss with olive oil, salt and pepper.
  2. 02Top the quinoa with diced tomatoes, cucumber, olives, red onion, cubed chicken and a dollop of tzatziki.
  3. 03Squeeze lemon juice over the bowl, then sprinkle with feta cheese.
  4. 04Enjoy now or pack away in a tupperware container to enjoy this week!
