EverRoast® Chicken Bruschetta
Ingredients

EverRoast Oven Roasted Chicken Breast, sliced thin1
Baguette, sliced¼cup
Olive oil¼cup
Basil2
Roma tomatoes, diced¼tsp
Salt¼tsp
Black pepper2tbsp
Balsamic vinegar3each
Garlic clove, minced½cup
Sundried tomatoes in oil, chopped16oz

- 01Preheat the oven on broiler setting.
- 02In large bowl, combine the roma (plum) tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.
- 03Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer.
- 04Broil for 1 to 2 minutes, until slightly brown.
- 05Divide the tomato mixture evenly over the baguette slices. Layer the chicken slices evenly over the tomato mixture.Top the slices with mozzarella cheese.
- 06Broil for 5 minutes, or until the cheese is melted.
