EverRoast® Chicken Bruschetta

EverRoast Oven Roasted Chicken Breast, sliced thin

Baguette, sliced
¼cup
Olive oil
¼cup
Basil

Roma tomatoes, diced
¼tsp
Salt
¼tsp
Black pepper
2tbsp
Balsamic vinegar

Garlic clove, minced
½cup
Sundried tomatoes in oil, chopped

Instructions


  1. 01Preheat the oven on broiler setting.
  2. 02In large bowl, combine the roma (plum) tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.
  3. 03Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer.
  4. 04Broil for 1 to 2 minutes, until slightly brown.
  5. 05Divide the tomato mixture evenly over the baguette slices. Layer the chicken slices evenly over the tomato mixture.Top the slices with mozzarella cheese.
  6. 06Broil for 5 minutes, or until the cheese is melted.
