Slice the ciabatta bun in half, setting the top aside.
Layer the bottom slice with muenster cheese, fresh spinach and mushrooms, followed by chicken and another slice of cheese.
Sprinkle with fresh parsley, to garnish, then place the ciabatta lid on top of the sandwich.
Spread a light layer of butter on the outer sides of the sandwich.
Cook the sandwich in a preheated panini press until golden brown and cheese is melted.
