Spinach, Mushroom & Caramelized Onion Jack Cheese Salad

  1. In a large sauté pan, heat oil over medium heat. Add mushrooms and cook, stirring frequently, until browned, about 6-8 minutes. Season with salt and pepper. Remove from heat.
  2. Combine the spinach, cheese, celery, parsley and walnuts in a large bowl.
  3. Whisk together extra-virgin olive oil, vinegar, mustard, thyme and garlic. Season with salt and pepper, to taste.
  4. Divide salad mixture among serving bowls, top with mushrooms, and drizzle each with vinaigrette.
