Goat Cheese & Fuji Apple Salad
Sweet grapefruit perfectly complements our tangy Chèvre Goat Cheese in this light and refreshing spring salad.
Ingredients
2tbsp
White wine vinegar1tsp
Honey3
Fuji apple, sliced in wedges6leaves
Basil, chopped6cups
Spring mix lettuce¼cup
Baby spinach leaves, chopped¼cup
Scallions, chopped1cup
Boar's Head Goat Cheese, crumbled ¼cup
Toasted slivered almonds1tbsp
Olive OilInstructions
- 01In a medium bowl, whisk together the vinegar and the honey. Add the apples and basil and toss to coat.
- 02In a separate large bowl, add the spring mix, spinach, scallions, goat cheese and almonds; then sprinkle with salt and pepper.
- 03Pour the apple mixture and olive oil over the salad and toss to coat.
- 04Split evenly among four bowls and serve.
