Goat Cheese & Fuji Apple Salad

Sweet grapefruit perfectly complements our tangy Chèvre Goat Cheese in this light and refreshing spring salad.

Ingredients


2tbsp
White wine vinegar
1tsp
Honey
3
Fuji apple, sliced in wedges
6leaves
Basil, chopped
6cups
Spring mix lettuce
¼cup
Baby spinach leaves, chopped
¼cup
Scallions, chopped
1cup
Boar's Head Goat Cheese, crumbled
¼cup
Toasted slivered almonds
 
Salt & pepper, to taste
1tbsp
Olive Oil

Instructions


  1. 01In a medium bowl, whisk together the vinegar and the honey. Add the apples and basil and toss to coat.
  2. 02In a separate large bowl, add the spring mix, spinach, scallions, goat cheese and almonds; then sprinkle with salt and pepper.
  3. 03Pour the apple mixture and olive oil over the salad and toss to coat.
  4. 04Split evenly among four bowls and serve.
