EverRoast® Chicken Cobb Salad with Jalapeño Corn Vinaigrette
Enjoy a fresh, healthy salad with nectarine, avocado, corn, and our Naturally Smoked Bacon, topped with Creamy Feta Cheese. It's a balance of sweet and spicy (the best of both worlds), and it's one you'll want to make again.
Ingredients

Butter Lettuce, torn1cup
Cherry Tomatoes, halved1whole
Nectarine, sliced4oz
Boar's Head Feta Cheese, crumbled1whole
Avocado, sliced6strips
Boar's Head Thick Cut Bacon, chopped 4
Hard boiled egg, sliced¼cup
Extra Virgin Olive Oil2
Lime, juiced2tbsp
Apple cider vinegar1tbsp
Honey1whole
Baby Red and Yellow Peppers, seeded, if desired¼cup
Fresh cilantro, chopped½cup
Corn kernelsInstructions
- 01 In a large salad bowl, combine the lettuce, tomatoes, nectarines, and feta.
- 02Top the salad with chicken, avocado, bacon, and eggs.
- 03For the vinaigrette, combine all remaining ingredients, except the corn, in a blender. Add 1/4 cup of corn and pulse until mostly smooth.
- 04Stir in the remaining corn, and drizzle the dressing over the salad.
- 05Serve and enjoy.
