Bold Ichiban Teriyaki® Style Chicken Sandwich with Asian Slaw

Ingredients


 
Header, Asian Slaw

Carrot, peeled, sliced into matchsticks
½
Cucumbers, sliced into thin sticks
3
Scallion, diced
¼cup
Rice vinegar
 
Header, Sandwich
8slices
Boar's Head Bold® Ichiban Teriyaki® Style Chicken Breast, sliced thick
1
Zucchini, sliced thin
1
Red pepper, sliced thin
4
Ciabatta roll, sliced in half
2tsp
Vegetable oil
 
Salt & pepper, to taste

Instructions


  1. 01To make the Asian slaw combine carrots, cucumber and scallion in a medium bowl. Toss with vinegar until all vegetables are evenly coated, and set aside.
  2. 02On a clean work surface, slice zucchini and red pepper into thin strips and lightly coat with vegetable oil.
  3. 03In a non-stick skillet, heat vegetables over medium heat until warm.
  4. 04Remove vegetables and set aside.
  5. 05Place Boar's Head Bold® Ichiban Teriyaki® Style Chicken Breast into the skillet, and heat until warm.
  6. 06Remove chicken and set aside.
  7. 07Open each ciabatta roll and place onto a clean, flat surface.
  8. 08On the bottom half of each ciabatta roll, layer two slices of chicken, followed by zucchini and red pepper.
  9. 09Top the sandwich with the Asian slaw.
  10. 10Crown each sandwich with the top half of the ciabatta roll and serve.
