Bold Ichiban Teriyaki® Style Chicken Sandwich with Asian Slaw
Ingredients

Carrot, peeled, sliced into matchsticks½
Cucumbers, sliced into thin sticks3
Scallion, diced¼cup
Rice vinegar8slices
Boar's Head Bold® Ichiban Teriyaki® Style Chicken Breast, sliced thick1
Zucchini, sliced thin1
Red pepper, sliced thin4
Ciabatta roll, sliced in half2tsp
Vegetable oilInstructions
- 01To make the Asian slaw combine carrots, cucumber and scallion in a medium bowl. Toss with vinegar until all vegetables are evenly coated, and set aside.
- 02On a clean work surface, slice zucchini and red pepper into thin strips and lightly coat with vegetable oil.
- 03In a non-stick skillet, heat vegetables over medium heat until warm.
- 04Remove vegetables and set aside.
- 05Place Boar's Head Bold® Ichiban Teriyaki® Style Chicken Breast into the skillet, and heat until warm.
- 06Remove chicken and set aside.
- 07Open each ciabatta roll and place onto a clean, flat surface.
- 08On the bottom half of each ciabatta roll, layer two slices of chicken, followed by zucchini and red pepper.
- 09Top the sandwich with the Asian slaw.
- 10Crown each sandwich with the top half of the ciabatta roll and serve.
