EverRoast® Chicken Cobb Salad with Jalapeño Corn Vinaigrette

EverRoast Oven Roasted Chicken Breast, shredded

Boar's Head® Butcher Craft® Thick Cut Bacon, chopped
4oz
Boar's Head® Creamy Feta Crumbles, crumbled

Pita, buttered, torn

Cherry tomatoes, halved
1whole
Nectarine, thinly sliced
1whole
Avocado , sliced

Hard boiled egg, sliced
 
Header, Vinaigrette
¼cup
Extra virgin olive oil

Lime, juiced
2tbsp
Apple cider vinegar
1tbsp
Honey
1whole
Jalapeño , seeded, if desired
¼cup
Fresh cilantro, chopped
½cup
Corn kernels
 
Flaky sea salt (i.e. Maldon Salt), to taste

Instructions


  1. 01In a large salad bowl, combine the greens, tomatoes, nectarine, and feta.
  2. 02Top the salad with EverRoast® Chicken, avocado, bacon, and eggs.
  3. 03For the vinaigrette, Combine all ingredients except the corn in a blender. Add 1/4 cup of corn and pulse until mostly smooth. Stir in the remaining corn. Drizzle over the salad.
  4. 04Serve
