EverRoast® Chicken Cobb Salad with Jalapeño Corn Vinaigrette
Ingredients
12oz
EverRoast Oven Roasted Chicken Breast, shredded6strips
Boar's Head® Butcher Craft® Thick Cut Bacon, chopped4oz
Boar's Head® Creamy Feta Crumbles, crumbled6
Pita, buttered, torn1cup
Cherry tomatoes, halved1whole
Nectarine, thinly sliced1whole
Avocado , sliced4
Hard boiled egg, sliced¼cup
Extra virgin olive oil2
Lime, juiced2tbsp
Apple cider vinegar1tbsp
Honey1whole
Jalapeño , seeded, if desired¼cup
Fresh cilantro, chopped½cup
Corn kernelsInstructions
- 01In a large salad bowl, combine the greens, tomatoes, nectarine, and feta.
- 02Top the salad with EverRoast® Chicken, avocado, bacon, and eggs.
- 03For the vinaigrette, Combine all ingredients except the corn in a blender. Add 1/4 cup of corn and pulse until mostly smooth. Stir in the remaining corn. Drizzle over the salad.
- 04Serve
