Corned Beef Boxty

Ingredients


 
Header, Boxty

Mashed Potatoes
3tbsp
Freshly Ground Horseradish
4cups
Idaho Potato , grated and squeezed dry
4each
Green Onion or Scallion, finely chopped
2tbsp
Baking powder
 to taste
Salt & Freshly Cracked Black Pepper, To Taste

Egg, beaten
1cup
Whole milk
4tbsp
Canola Oil or other High-Temperature Frying Oil

Boar's Head 1st Cut Corned Beef Brisket, Shredded
1lb
Boar’s Head® Imported Switzerland Swiss® Cheese, Shredded

Instructions


  1. 01In a large bowl, mix the mashed potatoes, horseradish and chopped scallions.
  2. 02Stir in the dried grated potato, flour, baking powder and salt and pepper.
  3. 03In a medium bowl whisk together the eggs and milk.
  4. 04Stir the egg and milk mixture into the potatoes until it has the consistency of thick pancake batter.
  5. 05In a large skillet, heat two tablespoons of oil over medium high heat. Add more oil as needed
  6. 06Spoon enough of the potato mixture into the pan to form a pancake that is approximately 6" round and 14" thick.
  7. 07Use a spoon to help shape the pancake.
  8. 08Cook until the bottom is golden brown then carefully flip and cook the second side until golden.
  9. 09Place approximately 2 ounces of corned beef and 2 ounces of grated Swiss cheese on half of the potato pancake.
  10. 10Fold the other half of the potato pancake over the corned beef and cheese. Cook until the cheese melts.
  11. 11Remove from the pan and place in a warming oven.
  12. 12Repeat the process until you have made 12 Corned beef boxtys.
