Corned Beef Boxty
Ingredients
4cups
Mashed Potatoes3tbsp
Freshly Ground Horseradish4cups
Idaho Potato , grated and squeezed dry4each
Green Onion or Scallion, finely chopped2tbsp
Baking powder to taste
Salt & Freshly Cracked Black Pepper, To Taste6each
Egg, beaten1cup
Whole milk4tbsp
Canola Oil or other High-Temperature Frying Oil1lb
Boar's Head 1st Cut Corned Beef Brisket, Shredded1lb

- 01In a large bowl, mix the mashed potatoes, horseradish and chopped scallions.
- 02Stir in the dried grated potato, flour, baking powder and salt and pepper.
- 03In a medium bowl whisk together the eggs and milk.
- 04Stir the egg and milk mixture into the potatoes until it has the consistency of thick pancake batter.
- 05In a large skillet, heat two tablespoons of oil over medium high heat. Add more oil as needed
- 06Spoon enough of the potato mixture into the pan to form a pancake that is approximately 6" round and 14" thick.
- 07Use a spoon to help shape the pancake.
- 08Cook until the bottom is golden brown then carefully flip and cook the second side until golden.
- 09Place approximately 2 ounces of corned beef and 2 ounces of grated Swiss cheese on half of the potato pancake.
- 10Fold the other half of the potato pancake over the corned beef and cheese. Cook until the cheese melts.
- 11Remove from the pan and place in a warming oven.
- 12Repeat the process until you have made 12 Corned beef boxtys.
