Bacon-Wrapped Jalapeño Poppers

Sharp Wisconsin Cheddar Cheese - Yellow, shredded2cups
Bold 3 Pepper Colby Jack® Cheese, shredded12slices
Butcher Craft® Extra Thick Cut Naturally Smoked Bacon, Product of Canada, cut in half8oz
Cream cheese, room temperature½cup
Cilantro leaves, chopped2tbsp
Chives, chopped½tsp
Garlic powder½tsp
Crushed red pepper flakes12
Large jalapeño peppers, halved lengthwise and seeded12

- 01Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
- 02In a bowl, combine the cream cheese, cheddar, colby jack, cilantro, chives, garlic powder, and crushed red pepper.
- 03Stuff the pepper halves with the cream cheese mixture then wrap with a slice of bacon, holding in place with a toothpick.
- 04Place the wrapped jalapeños on the prepared baking sheet and bake for about 20 minutes, until bacon is crispy and the cheese is melted.
- 05Switch the oven to broil for 1-2 minutes to give the bacon an extra crisp.
- 06Remove toothpicks before serving.
