Goat Cheese & Fuji Apple Salad
Sweet grapefruit perfectly complements our tangy Chèvre Goat Cheese in this light and refreshing spring salad.
- In a medium bowl, whisk together the vinegar and the honey. Add the apples and basil and toss to coat.
- In a separate large bowl, add the spring mix, spinach, scallions, goat cheese and almonds; then sprinkle with salt and pepper.
- Pour the apple mixture and olive oil over the salad and toss to coat.
- Split evenly among four bowls and serve.
