Provolone and Zucchini Crostini

Enjoy the savory goodness of melted Picante Provolone cheese with our simple yet decadent Crostini.

Ingredients

Yellow Onion, diced
1tbsp
Olive Oil

Large Zucchini, julienne
2
Garlic clove, minced
1
Tomato, diced
1tsp
Thyme, chopped
¼cup
Dry white wine
 
Salt & pepper, to taste
2
Baguette, diagonally sliced
10slices
Boar’s Head® Picante Provolone Cheese, halved

Instructions


  1. 01Preheat oven to 450° F.
  2. 02In a large skillet, cook onion in olive oil over medium heat until soft.
  3. 03Add zucchini and garlic until zucchini is barely tender, stirring occasionally.
  4. 04Add tomatoes and thyme, cook for about two more minutes.
  5. 05Add wine, salt & pepper and simmer for about 4 minutes or until the liquid is reduced by at least half.
  6. 06Remove from skillet and allow to cool.
  7. 07On a baking sheet toast bread (brush with olive oil, if desired) until pale golden, about 3 to 4 minutes).
  8. 08Mound about two tablespoons of the zucchini mixture on each toast round and top with the half slice of provolone.
  9. 09Bake crostini in the middle of the oven until cheese is melted and golden.
