Loaded Bell Pepper Nachos

Baked bell peppers are loaded with your favorite nacho toppings and PitCraft® Turkey for a unique and flavorful, guilt-free snack.

Ingredients

Baby sweet peppers, halved
1lb
Bold PitCraft® Slow Smoked Turkey Breast, cubed
1cup
Boar's Head Vermont Cheddar Cheese, shredded
¼cup
Black Beans, drained and rinsed

Baby Red and Yellow Peppers, sliced thin
 
Cilantro, chopped for topping
 
Scallions, chopped for topping
1
Avocado, halved and sliced for topping
 
Lime wedges, for topping
 
Boar’s Head® Kosher Dill Pickle Spears, for drizzling

Instructions


  1. 01Preheat the oven to 400º F and line a baking sheet with parchment paper.
  2. 02Place the bell peppers cut-side up in an even layer on the baking sheet.
  3. 03Fill each pepper evenly with turkey, topping with the cheese, black beans and jalapeños.
  4. 04Bake until the cheese has melted, about 10 minutes.
  5. 05Remove from the oven and top with cilantro, scallions, avocado, a squeeze of lime and a drizzle of Chipotle Gourmaise.
