Instructions

Make the Béchamel Sauce:

  1. In a small sauce pan over medium heat, melt the butter.
  2. Add the flour and whisk constantly for 1 minute.
  3. Slowly whisk in the milk until smooth.
  4. Bring to a boil and cook until thickened, about 2-3 minutes.
  5. Remove from heat and season with nutmeg. Set aside.

Assemble the Toasts:

  1. Pan-fry each egg until over-easy. Set aside.
  2. Preheat the broiler. Spread mustard on one side of each slice of toast.
  3. Top each with a slice of cheese and ham.
  4. Place on a baking sheet and broil until the cheese melts and the ham edges begin to crisp, about 3 minutes.
  5. Top each toast with an over-easy egg and a drizzle of béchamel sauce.
  6. Serve and enjoy!
