Croque Madame Toasts
A Croque Madame sandwich reimagined for breakfast? Bien sûr. Take your creativity and taste buds on a journey with this beautiful combination of our Boar’s Head® Branded Deluxe Ham, creamy Guyere Cheese, and Delicatessen Style Mustard on toast; made complete with a drizzle of classic Béchamel sauce.

All Purpose Flour1cup
Milk¼tsp
Ground Nutmeg4
Eggs4
Sourdough Bread, toasted3tbsp
Boar’s Head® Delicatessen Style Mustard4oz
Blanc Grue® Gruyere Cheese, sliced thin4oz
Boar’s Head® Branded Deluxe Ham, sliced thinInstructions
- 01Header: Make the Béchamel Sauce:
- 02In a small sauce pan over medium heat, melt the butter.
- 03Add the flour and whisk constantly for 1 minute.
- 04Slowly whisk in the milk until smooth.
- 05Bring to a boil and cook until thickened, about 2-3 minutes.
- 06Remove from heat and season with nutmeg. Set aside.
- 07Header: Assemble the Toasts:
- 08Pan-fry each egg until over-easy. Set aside.
- 09Preheat the broiler. Spread mustard on one side of each slice of toast.
- 10Top each with a slice of cheese and ham.
- 11Place on a baking sheet and broil until the cheese melts and the ham edges begin to crisp, about 3 minutes.
- 12Top each toast with an over-easy egg and a drizzle of béchamel sauce.
- 13Serve and enjoy!
