Chipotle Chicken and Greens Salad

Ingredients


3oz
Boar's Head Bold® Chipotle Chicken, julienne
2oz
Boar’s Head® Jalapeño Pepper Jack Cheese, shredded
2oz
Romaine, chopped
2oz
Kale, Fresh, finely chopped
1oz
Garlic, fresh, shredded
2oz
Avocado , sliced
1oz
Roasted Corn
1oz
Grape tomatoes, halved
1oz
Header, Chipotle Honey Vinaigrette
6tbsp
Red wine vinegar
½tsp
Oregano
½tsp
Black pepper
2each
Chipotle peppers in adobo sauce
2
Garlic clove
¾cup
Grapeseed oil

Instructions


  1. 01Combine all the ingredients except the chicken in a medium mixing bowl.
  2. 02Gently toss with the chipotle vinaigrette and serve on a chilled salad plate.
  3. 03Place the chicken evenly over the top.
  4. 04Chipotle Vinaigrette
  5. 05Combine all ingredients in a blender or small food processor and blend until well combined. Serve Immediately or store in an airtight container in the refrigerator.
